Some wines have been part of Birdie’s since day one. @domainelampyres was on our opening glass menu, so getting to hang with F.X. feels a little full-circle.

François-Xavier “FX” Dauré is a fourth-generation grower in Espira de l’Agly, in France’s wild, sun-soaked Roussillon. After working for five years alongside Tom Lubbe at cult producer Matassa, FX took over his family’s vineyards, converted them to organic farming and started making his own wine. His first vintage? Just 600 bottles made in his garage.

And the name Lampyres? It means fireflies. While working full-time at Matassa, FX would head into his own vineyards hours before sunrise, pruning by headlamp. His neighbors joked that the light moving through the vines made him look like a firefly. The name stuck.

On Friday, October 2, FX is taking over the Birdie’s BTG and slinging wine for all our friends. Come taste through the wines, meet the winemaker, ask questions—or just hang out and drink really good Roussillon.
